Pickling vegetables is a cost effective way to make healthy snacks.

Food that is otherwise out of season can be enjoyed when pickled.

Pickling Vinegarλ︎

Pickling vinegar with 5% acetic acid concentration or higher will prevent the growth of bacteria and mould in your pickle jars. The greater the acidic level of the vinegar, the longer your pickles will last.

Buying in bulk can be more cost efficient as pickling vinegar should last at least 1 year and up to 3 years. Check the

Distilled white vinegarλ︎

Made from grain alcohol, it is a clear vinegar with no taste of its own, so it maintains the colour and flavour of the produce being pickled.

It is ideal for pale produce like fruits and white vegetables.

Interesting tastes are achieved by infusing with herbs or spices.

Mix with distilled water to achieve the desired level of acidity.

Malt vinegarλ︎

Aged and made from malted grains of barley and creates a vinegar with a very strong and distinctive flavour. It may overpower the flavour of some pickled items.

It is particularly good for pickling watery vegetables like onions and cucumbers.

Traditional English pickles use malt vinegar due to its high acidity level.

Apple Cider vinegarλ︎

Made from fermented apple juice it is milder and sweeter in taste than white vinegar . Its rich honey colour can turn pickled items brown, so it is best to pair with darker coloured produce if you don’t want this effect.

Many people feel cider vinegar has a superior flavour that creates pickles with a richer depth.

Wine Vinegarλ︎

Made from wine, champagne, or sherry to produce a vinegar with a subtle, delicate fruit flavour.

Red wine vinegar is often used for pickling cabbage.

Wine vinegar does tend to have a lower acidity than other vinegars, so check for a minimum 5% acetic acid concentration.
